Ingredients:
4 bone-in pork chops (about 1 inch thick)
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
½ cup pepper jelly (any variety you love)
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon soy sauce
2 cloves garlic, minced
½ teaspoon crushed red pepper flakes (optional, for extra heat)

Instructions:
Season & Sear the Pork Chops
Pat the pork chops dry and season both sides with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Sear the pork chops for 3-4 minutes per side until golden brown. Remove and set aside.
Make the Glaze
In the same skillet, reduce heat to medium and add the pepper jelly, apple cider vinegar, Dijon mustard, soy sauce, garlic, and red pepper flakes. Stir until combined.
Simmer for 2 minutes until the mixture thickens slightly.
Infuse with RSO
Remove the glaze from heat, then stir in your measured dose of RSO. Mix well to distribute evenly.
Coat & Finish Cooking
Return the pork chops to the skillet, spooning the glaze over them.
Cook for another 3-4 minutes, flipping once, until the internal temperature reaches 145°F.
Serve & Enjoy
Let the pork chops rest for 5 minutes before serving. Drizzle extra glaze over the top and pair with roasted veggies or garlic mashed potatoes for the ultimate infused feast!
