Peanut Budda Cannabis Cheesecake Bars

Prep Time: 20-30 minutes Yield 12-16 serving-sized bars

Ingredients

For the crust:

  • 1 1/2 c graham cracker crumbs

  • 1/3 c granulated sugar

  • 1/2 c unsalted butter, melted

  • 1/2 c creamy peanut butter

For the filling:

  • 16 oz cream cheese, softened

  • 2/3 c granulated sugar

  • 2 large eggs

  • 2 t vanilla extract

  • 1/4 c cannabis-infused butter, melted

  • 1/2 c creamy peanut butter

Instructions

  1. Preheat the oven to 325°F (162°C).

  2. In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and creamy peanut butter. Mix until crumbs are evenly coated.

  3. Press the mixture into the bottom of a 9x13 inch baking dish.

  4. In a separate mixing bowl, beat cream cheese and sugar until creamy.

  5. Add eggs and vanilla extract to the bowl and beat until combined.

  6. Mix in melted cannabis-infused butter and peanut butter, beating until smooth.

  7. Spread mixture over the crust in the baking dish.

  8. Bake for 30-35 minutes, or until the edges are set and the center is still slightly jiggly.

  9. Remove from the oven and allow the bars to cool to room temperature.

  10. Once they have cooled, place them in the fridge for at least two hours to set.

  11. Cut into bars and enjoy.

Note: The number of servings may vary depending on the size of the bars. This recipe should make about 12-16 bars.
