Green Genie Hummus

Prep Time: 20-45 mins         Yield: 3 - 4 Servings

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1/4 cup RSO-infused olive oil (Click for instructions below)

  • 1/4 cup tahini

  • 1/4 cup freshly squeezed lemon juice

  • 2 cloves garlic, minced

  • 1/2 teaspoon ground cumin

  • Salt to taste

  • 2-3 tablespoons water (or as needed for desired consistency)

  • Paprika and olive oil for garnish

  • Fresh parsley, chopped (optional)

Instructions

Blend Chickpeas and Tahini:

  • In a food processor, combine the chickpeas, tahini, lemon juice, and garlic. Blend until smooth.

Add RSO-Infused Olive Oil:

  • Slowly drizzle in the RSO-infused olive oil while the food processor is running. Blend until well combined.

Season and Adjust Consistency:

  • Add ground cumin and salt. Blend again.

  • If the hummus is too thick, add water a tablespoon at a time until you reach the desired consistency.

Serve:

  • Transfer the hummus to a serving bowl.

  • Drizzle with additional olive oil and sprinkle with paprika.

  • Garnish with chopped fresh parsley if desired.

Enjoy:

  • Serve with pita bread, crackers, or fresh vegetables.

Notes:

  • Dosage: The potency of your RSO will determine the dosage of your infused hummus. Adjust the amount of RSO in the olive oil according to your desired strength.

  • Storage: Store any leftover hummus in an airtight container in the refrigerator for up to a week.
