Green Genie Hummus

Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup RSO-infused olive oil (Click for instructions below)
1/4 cup tahini
1/4 cup freshly squeezed lemon juice
2 cloves garlic, minced
1/2 teaspoon ground cumin
Salt to taste
2-3 tablespoons water (or as needed for desired consistency)
Paprika and olive oil for garnish
Fresh parsley, chopped (optional)
Instructions
Blend Chickpeas and Tahini:
In a food processor, combine the chickpeas, tahini, lemon juice, and garlic. Blend until smooth.
Add RSO-Infused Olive Oil:
Slowly drizzle in the RSO-infused olive oil while the food processor is running. Blend until well combined.
Season and Adjust Consistency:
Add ground cumin and salt. Blend again.
If the hummus is too thick, add water a tablespoon at a time until you reach the desired consistency.
Serve:
Transfer the hummus to a serving bowl.
Drizzle with additional olive oil and sprinkle with paprika.
Garnish with chopped fresh parsley if desired.
Enjoy:
Serve with pita bread, crackers, or fresh vegetables.
Notes:
Dosage: The potency of your RSO will determine the dosage of your infused hummus. Adjust the amount of RSO in the olive oil according to your desired strength.
Storage: Store any leftover hummus in an airtight container in the refrigerator for up to a week.
