Green Genie Hummus

Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed 
- 1/4 cup RSO-infused olive oil (Click for instructions below) 
- 1/4 cup tahini 
- 1/4 cup freshly squeezed lemon juice 
- 2 cloves garlic, minced 
- 1/2 teaspoon ground cumin 
- Salt to taste 
- 2-3 tablespoons water (or as needed for desired consistency) 
- Paprika and olive oil for garnish 
- Fresh parsley, chopped (optional) 
Instructions
Blend Chickpeas and Tahini:
- In a food processor, combine the chickpeas, tahini, lemon juice, and garlic. Blend until smooth. 
Add RSO-Infused Olive Oil:
- Slowly drizzle in the RSO-infused olive oil while the food processor is running. Blend until well combined. 
Season and Adjust Consistency:
- Add ground cumin and salt. Blend again. 
- If the hummus is too thick, add water a tablespoon at a time until you reach the desired consistency. 
Serve:
- Transfer the hummus to a serving bowl. 
- Drizzle with additional olive oil and sprinkle with paprika. 
- Garnish with chopped fresh parsley if desired. 
Enjoy:
- Serve with pita bread, crackers, or fresh vegetables. 
Notes:
- Dosage: The potency of your RSO will determine the dosage of your infused hummus. Adjust the amount of RSO in the olive oil according to your desired strength. 
- Storage: Store any leftover hummus in an airtight container in the refrigerator for up to a week.
