🍕 Bong Appétit Pizza Casserole

📝 Ingredients

  • 12 oz cavatappi pasta

  • 2 tablespoons plus 2 teaspoons kosher salt, divided

  • 1 lb Italian sausage, casings removed

  • 8 oz cremini mushrooms, stemmed and sliced

  • 1 small yellow onion, chopped (about 1½ cups)

  • 2 cloves garlic, finely chopped

  • 3 (8-oz) cans tomato sauce

  • 1 (14.5-oz) can diced tomatoes

  • 1½ teaspoons dried oregano

  • 1 teaspoon dried basil

  • ¼ teaspoon crushed red pepper flakes

  • ½ green bell pepper, chopped into ½-inch pieces

  • 3 cups shredded mozzarella, divided

  • ⅓ cup sliced pepperoni (about 2 oz)

  • RSO-infused olive oil (Recipe found here)

👩‍🍳 Instructions

  1. Preheat Oven: Set to 350°F (175°C). Grease a 13x9-inch baking dish with a bit of the infused olive oil.​

  2. Cook Pasta: Bring a large pot of water to a boil. Add pasta and 2 tablespoons salt. Cook until al dente (7–9 minutes). Drain and set aside.​

  3. Cook Sausage: In a large skillet over medium heat, add 1 tablespoon of the infused oil. Add sausage and cook, breaking into bite-size pieces, until browned and cooked through (4–5 minutes). Transfer to a bowl, leaving fat in the skillet.​

  4. Sauté Mushrooms: In the same skillet, add mushrooms and 1 tablespoon of the infused oil; season with ½ teaspoon salt. Cook until browned (5–6 minutes). Transfer to the bowl with sausage.​

  5. Prepare Sauce: In the same skillet, add onion, garlic, ½ teaspoon salt, and remaining infused oil. Cook until onion is softened (4–5 minutes). Stir in tomato sauce, diced tomatoes, oregano, basil, red pepper flakes, and remaining 1 teaspoon salt. Remove 2 cups of sauce and set aside.​

  6. Combine Mixture: Add bell pepper, cooked sausage, mushrooms, and pasta to the skillet with the remaining sauce. Stir until combined and heated through (1–2 minutes).​

  7. Assemble Casserole: Pour half of the pasta mixture into the prepared baking dish. Sprinkle with 1 cup mozzarella. Add remaining pasta mixture. Pour reserved 2 cups sauce over the top.​

  8. Bake: Cover with foil and bake until hot and bubbling around the edges (about 20 minutes). Remove foil, top with remaining 2 cups mozzarella and pepperoni. Continue baking until cheese is melted and pepperoni is browned (15–20 minutes).

  9. Serve: Let stand for a few minutes before serving.
