🍕 Bong Appétit Pizza Casserole

12 oz cavatappi pasta
2 tablespoons plus 2 teaspoons kosher salt, divided
1 lb Italian sausage, casings removed
8 oz cremini mushrooms, stemmed and sliced
1 small yellow onion, chopped (about 1½ cups)
2 cloves garlic, finely chopped
3 (8-oz) cans tomato sauce
1 (14.5-oz) can diced tomatoes
1½ teaspoons dried oregano
1 teaspoon dried basil
¼ teaspoon crushed red pepper flakes
½ green bell pepper, chopped into ½-inch pieces
3 cups shredded mozzarella, divided
⅓ cup sliced pepperoni (about 2 oz)

👩🍳 Instructions
Preheat Oven: Set to 350°F (175°C). Grease a 13x9-inch baking dish with a bit of the infused olive oil.
Cook Pasta: Bring a large pot of water to a boil. Add pasta and 2 tablespoons salt. Cook until al dente (7–9 minutes). Drain and set aside.
Cook Sausage: In a large skillet over medium heat, add 1 tablespoon of the infused oil. Add sausage and cook, breaking into bite-size pieces, until browned and cooked through (4–5 minutes). Transfer to a bowl, leaving fat in the skillet.
Sauté Mushrooms: In the same skillet, add mushrooms and 1 tablespoon of the infused oil; season with ½ teaspoon salt. Cook until browned (5–6 minutes). Transfer to the bowl with sausage.
Prepare Sauce: In the same skillet, add onion, garlic, ½ teaspoon salt, and remaining infused oil. Cook until onion is softened (4–5 minutes). Stir in tomato sauce, diced tomatoes, oregano, basil, red pepper flakes, and remaining 1 teaspoon salt. Remove 2 cups of sauce and set aside.
Combine Mixture: Add bell pepper, cooked sausage, mushrooms, and pasta to the skillet with the remaining sauce. Stir until combined and heated through (1–2 minutes).
Assemble Casserole: Pour half of the pasta mixture into the prepared baking dish. Sprinkle with 1 cup mozzarella. Add remaining pasta mixture. Pour reserved 2 cups sauce over the top.
Bake: Cover with foil and bake until hot and bubbling around the edges (about 20 minutes). Remove foil, top with remaining 2 cups mozzarella and pepperoni. Continue baking until cheese is melted and pepperoni is browned (15–20 minutes).
Serve: Let stand for a few minutes before serving.
